The best darn Potato Soup I'VE ever eaten...

Baked Potato Soup - Slow Cooker Style



Slow Cooker Baked Potato Soup Ingredients:
  • 5 pounds russet potatoes, washed but NOT peeled. Diced into 1/2 inch(ish) cubes
  • 1 medium/large yellow onion, diced
  • 10 cloves of garlic, minced (if you use jarred, it's a 5 teaspoon equivalent)
  • 64 ounces (8 cups) chicken stock or broth
  • 16 oz cream cheese, softened (I use low fat)
  • 1 tablespoon seasoned salt
  • optional garnishes: crumbled bacon, shredded cheese, green onions

Slow Cooker Baked Potato Soup Directions:
  1. Add potatoes, onion, garlic, seasoning, and chicken stock to slow cooker.
  2. Cook on high for 6 hours or low for 10 hours.
  3. Add the softened cream cheese and puree soup with an immersion blender until the cheese is incorporated and about half the soup is blended. (Alternately you could remove half the soup and the cream cheese to an upright blender, then re-incorporate).
  4. Stir well, top with your choice of garnishes & enjoy!

We're back.....




As you all probably know we had a life changing event in our small little family this year. I have all of this covered and if you don't know you can read everything that happened here Robpowell.org. We consider ourselves very blessed to have Robert still here with us.

Many people have said that they can't possible understand how it feels, what we are going through, what I'M going through. Yes, its a lot. BUT

WE ARE STILL HERE, WE ARE STILL US. DON'T BE AFRAID TO TALK TO US.

I have been told:

"You'll definitely find out who your friends are the first year. Some will leave, some will stay and stick by you."

I couldn't agree more.

There are many people that I don't talk to at all, that I probably talked to on a daily basis. Sad Really. I miss them.

BUT here we are. Robert, Hollie, Caleb, and Sarah back home. We have been home for the last 3 months.

Adjusting, Mourning, Grieving, Laughing, Yelling, Arguing, Loving, Crying

I pray everyday for:

Strength

Wisdom

Strength

Understanding

Strength - Did I mention strength?!?!

This is the HARDEST thing I have ever done in my life.

EVER.

I get keep going everyday for :

My kids, my husband, BECAUSE they can't do this without me. No one else will do it for them. I'm IT!

Yikes, its hard to type that out. So much responsibility, Very big shoulders.

I'm doing it though. Sometimes I don't know how, but then I remember my favorite verse.

"I can do all things through Christ who strengthens me." Phil 4:13

 HE has gotten me this far. and Only him. Thank you God for picking me up, EVERY TIME I fall.

Calebs Birthday Weekend


For Calebs big day We had a park play date for him, with a few of his classmates from school. 
Lots of fun and play time with them. Snack, laughs and sibling love too!

CLG Wednesdays

Because we have now joined a new CLG (Community Life Group) at our church, we are having a bible study/discussion as well as a meal on Wednesday nights while the kids are at the church having their own activities and meal. We all get home just in time for bedtimes (8p.m.) Which we thought we would never accomplish on a school night, with church activities, and eating. Its all really surreal, but it works, and it really gives us that great fellowship that our family needs and loves during the week.

I have been able to explore recipes thanks to my cook books and my very dependable recipes that my mother and grandmothers have passed down to me. Not to mention several ladies from the church I grew up in. Thank you all for inspiring me and giving me an idea or two. I have combined recipes, and made a few customized to my own tastes.

I'm so excited to have my passion of cooking back. Something that I haven't seen in over a year. I missed making food that people would enjoy, savor and delight in. I create, people eat, everyone is happy!


Tonight, I made some sweets for my littlest sweeties for Valentines day.


Caleb had been drooling over the Chocolate Covered Strawberries that were in the grocery the other day.
I decided to Cut the price and make these for way cheaper than they wanted me to pay for only a 1/2 dozen of these puppies. I think I did them justice, and my little babies will be so eager to gobble them up!

New Recipe Sunday.




Made these Ham and Swiss Sliders for the family today. They are so delicious, quick and easy to make. They are definitely going on the Meal planning list of Recipes.
